We have made a conscious choice to commit to eco-friendly and ethically sustainable operations that conserve nature and our cultural heritage.

It is important to us to ensure that social sustainability is considered. Our operations support and create local employment, and they are transparent and reliable.

The top quality of ingredients is also important, as is sharing our values with our producers.

There is plenty of discussion surrounding food’s journey from field to fork, and we also think it is important to communicate the origin of an ingredient to the consumer; where did it come from, who grew it, and how it was cultivated and grown.

    * Harmoonitehdas’ renovatin used traditional, natural oil paint and restoration methods recommended by the Finnish Heritage Agency.
    * Recycling, old windows, doors and even the floor are recycled, e.g. The Cellar Restaurant tables are made from the wooden floor of the old
    Harmoonitehdas’ organ factory’s factory hall.
